Ingredients:

  • 2 medium eggplants (900g)
  • 3 tablespoons (45 ml) olive oil
  • 100g feta cheese
  • 50g shredded mozzarella cheese
  • 2 cloves (4g) garlic
  • 25g parsley

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. Cut the eggplants in half lengthwise. Scoop out and discard the flesh of each eggplant halfleaving a 1 cm thick wall of flesh around the sides and bottom of the eggplant.
