This easy and nutritious fish dish is perfect for a family dinner.

Ingredients

  • 4 Cod fillets (150g each)
  • 4 tomatoeschopped (500g total)
  • 2 tablespoons caperstops and tails removed
  • 2 tablespoons olive oil
  • oreganoto taste
  • freshly cracked pepperto taste

Directions

  1. Preheat the oven to 200°C.
  2. Place the cod fillets on a baking tray lined with parchment paper.
  3. In a bowlmix together the chopped tomatoescapersoreganoand a good few grinds of pepper.
  4. Divide the tomato mixture between the four cod filletsspooning it on top of each in an even layer.
  5. Drizzle the olive oil over the cod.
  6. Place the cod in the oven and bake for 15 minutes.
  7. Knock knock. Who’s there? Boo. Boo who? Don’t cry - the cod is ready!
  8. Serve the cod with fresh tomatoes and capers.
