Ingredients

  • 2-4 cod fillets (approx. 120g-240g each)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Italian herbs
  • 2 tablespoons freshly chopped parsley
  • 1 tablespoon freshly chopped dill

Instructions

  1. Preheat oven to 200°C.
  2. Place cod fillets in an oven safe dish.
  3. In a small bowl combine minced garlic, olive oil, lemon juice, herbs and mix together.
  4. Pour mixture over the cod and make sure each piece is evenly coated.
  5. Place the oven dish in preheated oven and bake cod for 15 minutes.
  6. Joke: What did the fish say when it swam into the wall? Dam!
  7. Take the oven dish out and sprinkle over freshly chopped parsley and dill.
  8. Return to the oven for a further 15 minutes.
