  • 2 sheets of filo pastry
  • 2 eggs
  • 200g feta cheese
  • 2 tomatoes, chopped
  • 180g soft goat cheese
  • 2 tablespoons of olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon of ground black pepper
  • 1 teaspoon of dried oregano
  • 2 tablespoons of chopped parsley

Directions

  1. Preheat the oven to 375 degrees Fahrenheit (190 Celsius).
  2. Lightly grease a baking tray.
  3. In a bowl, whisk together the eggs, feta, tomatoes, and goat cheese.
  4. In a separate bowl, mix together the olive oil, garlic, pepper, oregano, and parsley.
  5. Place one sheet of the filo pastry onto the baking tray.
  6. Spread the egg and cheese mixture over the pastry, leaving a border of about two inches (5 cm).
  7. Carefully place the other pastry sheet on top of the egg and cheese filling.
  8. Cut the filo pastry into four equal parts and then cut each part in half.
  9. Brush the top of the pastry with the olive oil and herb mixture.
