Ingredients

  • 250g white long grain rice
  • 150g frozen peas
  • 100g bacon bits
  • 2 tablespoons oil
  • 1 large onion
  • 2 cloves garlic
  • 2 cups vegetable broth

Directions

  1. Heat the oil in a large non-stick skillet over medium heat.
  2. When the oil is hot, add the onions and garlic and cook for about 3 minutes, stirring occasionally.
  3. Once the onion and garlic are softened, add the bacon bits and frozen peas. Cook for about 5 minutes, stirring occasionally.
  4. Then add the rice and stir everything together to combine.
  5. Add the vegetable broth, reduce heat to low, cover and simmer for 20 minutes.
  6. After 20 minutes, check to make sure the rice is cooked and all of the liquid has been absorbed.
  7. When the rice is cooked, turn off the heat and remove the skillet from the stove.
  8. Feel free to add a few sprinkles of cheese here if you’re feeling cheesy! (See what I did there?). Serve warm.

This dish pairs well with a light salad of lettuce, tomatoes, and cucumbers, or alternatively a bowl of steamed green beans with a pinch of black pepper.
