Ingredients

  • 3 tablespoons vegetable oil
  • 2 cloves of garlicpeeled and minced
  • 1cm of fresh gingerpeeled and grated
  • 200g of mushroomssliced thinly
  • 1.5L of vegetable broth
  • 200g of dried soba noodles
  • 500g of skinless salmon filletcut into bite-sized pieces
  • 2 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of sesame oil
  • 2 tablespoons of sesame seeds
  • Freshly ground pepper to taste

Instructions

  1. In a large pot over medium-high heatheat the oil until it shimmers. (Joke: And now your pot is ready to make a shimmering soup!)
  2. Add the garlic and ginger and cook until fragrantstirring oftenabout 1 minute.
  3. Add the mushrooms to the pot and cook until golden brownabout 4 to 5 minutes.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add the soba noodles and simmer for 10 minutes.
  6. Add the salmon pieces and soy sauceand simmer for an additional 8 minutes until the salmon is cooked through.
  7. Add the rice vinegarsesame oiland sesame seedsand stir.
  8. Remove the pan from the heattasteand season with freshly ground pepper as desired.
