Ingredients

  • 500 g white arborio rice
  • 1.2 liters vegetable stock
  • 150 g mozzarella, cut in small pieces, avoiding any choking hazards for the children
  • 60 g Parmesan cheese
  • Fresh parsley, finely chopped
  • 2 tablespoons olive oil
  • 1 egg
  • 80 g plain flour
  • 80 g breadcrumbs

Directions

  1. Preheat the oven to 350 degrees fahrenheit (177 celsius).

  2. Heat the vegetable stock in a saucepan over medium-high heat.

  3. Once the vegetable stock is boiling, add the arborio rice and reduce the heat to low.

  4. After approximately 20 minutes, the rice should be cooked and the liquid should have reduced.

  5. Place the cooked rice in a bowl and add the mozzarella, Parmesan cheese, parsley, and olive oil. Mix all the ingredients together thoroughly and let it sit for about 10 minutes.

  6. In a separate bowl, beat the egg with a fork.

  7. Take a portion of the rice mixture (about the size of a small melon) and shape it into a ball.

  8. Dip the ball into the beaten egg and then in the flour and breadcrumbs.

  9. Place the balls on a greased baking tray and bake them in the oven for 20 minutes, or until the arancini are golden brown.

  10. Serve hot and enjoy!

Recommended Sides

Arancini taste great with a simple tomato and cucumber salad. They also pair wonderfully with marinara sauce for dipping!
