Ingredients

  • 140g filo pastry
  • 105g butter
  • 250g cooked and peeled apricots
  • 60ml oat milk
  • 30ml lemon juice
  • 1/2 teaspoon of cinnamon
  • 1 tablespoon of pumpkin seeds

Directions

  1. Preheat oven to 175°C
  2. Grease a 9-inch square baking pan with butter
  3. Place first layer of filo pastry onto baking pan and brush with melted butter
  4. Place second layer of filo pastry onto baking pan and brush with melted butter
  5. Continue to layer the filo pastry and butter until you have used all the pastry
  6. Place cooked and peeled apricots on top of the layered filo pastry
  7. In a separate bowl, mix together oat milk, lemon juice, and cinnamon and drizzle over the layered pastry
  8. Sprinkle pumpkin seeds on top of the layered pastry
  9. Bake in the preheated oven for 20 minutes or until the pastry is golden brown
  10. Once cooked, remove from oven and let cool for 30 minutes before slicing and serving
