Ingredients

  • 2 medium potatoes, peeled and diced
  • ½ cup of frozen green peas
  • 1 medium onion, finely chopped -1 teaspoon of turmeric
  • ½ teaspoon of mustard powder
  • 2 tablespoons of sunflower oil
  • 2 cloves of garlic, minced
  • 2 tablespoons of freshly chopped coriander or flat leaf parsley
  • Salt and pepper to taste

Directions

  1. Preheat oven to 200°C and line a baking tray with parchment paper.
  2. In a medium bowl, mix together the diced potatoes, peas, onion and turmeric.
  3. Place the potato mixture on the parchment paper-lined baking tray and bake for 20 minutes, until golden and cooked through.
  4. Meanwhile, heat the oil in a medium saucepan over medium heat and add the garlic, stirring frequently until golden brown.
  5. Add the mustard powder and cook for further 1 minute, stirring constantly.
  6. Add the roasted potato mixture to the saucepan and cook for an additional 5 minutes.
  7. Lastly, remove the pan from heat and stir in the fresh coriander or parsley, salt, and pepper.
  8. Serve the Aloo Mutter warm and enjoy!
