Ingredients

  • 2 medium-sized potatoes, peeled and diced
  • 1/2 cup besan
  • 1/4 teaspoon ajwain (carom seeds)
  • 1/4 teaspoon red chilli powder
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon amchur powder
  • 1/4 teaspoon turmeric powder
  • 2 tablespoons oil

Directions

  1. Preparing the Potatoes: Place the diced potatoes in a microwavable container and cover them with a lid. Microwave it for 3 minutes, and then drain and set aside for later use.

  2. Making the Batter: In a blender, add the besan, ajwain, red chilli powder, garam masala, amchur powder, and turmeric powder. Add a cup of water and blend it to a smooth batter.

  3. Making the Aloo Bhujia: Heat the oil in a pan and spread it evenly. Take a tablespoon of the batter at a time and add it to the pan. Spread it out evenly, making sure that the potato pieces are evenly spread out.

  4. Flip it over to the other side and cook for 3 minutes. Serve hot and enjoy with your family!

Aloo bhujia goes perfectly with a chutney or ketchup. You can also serve it with a yogurt-based raita or a refreshing glass of lassi. For some added crunch, you can also serve it with some freshly chopped onion and cilantro.

Tip: If you’re feeling adventurous, you can also give it a twist by adding some grated carrots, beans, or broccoli to the batter before frying it!
