Ingredients
- 2 cloves garlic
- 1 large egg
- 1/2 teaspoon white vinegar
- 2 tablespoons lemon juice
- 300ml mild oil

Peel and finely chop the garlic.

Crack the egg into a bowl and add the garlic, vinegar, and lemon juice.

Using a hand whisk or a food processor, whisk the ingredients together until the egg is fluffy and a light yellow colour.

Slowly pour the oil into the egg mixture whilst whisking. Make sure to add the oil slowly and whisk continuously until all the oil is incorporated.

Once all the oil has been incorporated, adjust the seasoning with a pinch of salt and pepper (optional).
